Recipe Ingredient

  • 3 bowls cooked rice, left overnight
  • 12 petai seeds, split and diced
  • 1 tbsp dried prawns, soaked and chopped
  • 50g anchovies, rinsed
  • 1 tsp chopped garlic
  • 2 eggs
  • 1 tbsp oil
  • 1 tbsp sesame oil
  • Seasoning
  • 1 tbsp light soy sauce
  • 2 tbsp oyster sauce
  • ½ tsp sugar
  • ½ tsp salt
  • ½ tsp pepper
  • ½-¾ tsp ground black pepper

Instructions

  1. Fry anchovies until crispy and set aside.
  2. Heat oil and sesame oil in a wok and fry garlic and dried prawns until fragrant.
  3. Push them to one side, then add eggs and scramble until just cooked.
  4. Add rice and toss briefly. Stir in seasoning and fry well. Add petai to mix.
  5. Sprinkle in pre-fried anchovies before serving.
