Recipe Ingredient
- 150g tomatoes
- 75g carrot
- 3 red chillies
- 6 bird's eye chillies
- 1 stalk lemon grass
- 4 slices galangal
- 10g fresh turmeric
- 75ml oil
- 15g tamarind slices
- 75g castor sugar
- 300g chilli paste
- 1 tsp salt
Instructions
- Combine tomatoes, red chillies, carrot, bird´s eye chillies, lemon grass, galangal and turmeric in a food processor. Blend into a fine paste.
- Heat oil in wok and add in blended spice paste and fry until fragrant. Add chilli paste and stir-fry until oil separates. Add tamarind slices, sugar and salt to taste. Dish out and leave to cool.
