Chocolate cupcakes are a childhood favourite and comfort food to satisfy a sweet tooth craving. These cupcakes are topped chocolate frosting with a bit of coffee flavour. Simple ingredients that makes a rich chocolatey dessert. It’s quick and easy to whip up too!
Recipe Ingredient
- Chocolate Cupcake:
- 280 g All Purpose Flour
- 60 g Cocoa Powder
- 1 ½ tsp Baking Soda
- 200 g Sugar
- 90 g Brown Sugar
- 300 g Water
- 180 g Corn Oil
- 2 tsp Vanilla Essence
- Mocha Frosting:
- 230 g Margarine
- 315 g Icing Sugar
- 40 g Cocoa Powder
- 48 g Soy Milk
- 8 g Mocha Essence
Instructions
- Preheat the oven to 160°C.
- In a large mixing bowl, add flour, cocoa powder, baking soda and sugar and stir briefly.
- In a separate mixing bowl, add water, oil and vanilla. Add water mixture to dry ingredients and stir to combine. Pour into prepared paper cups and bake for 25 minutes or until a skewer inserted in the middle comes out clean.
- Leave the cupcakes to cool before topping it up with frosting.
- Place margarine in a large mixing bowl and beat with hand whisk until smooth and creamy.
- Add icing sugar, cocoa powder and soy milk, and then beat again until smooth.
