Recipe Ingredient
- 4 big crabs (1 to 1.5kg), shelled and cut into bite-size pieces
- Combine:
- 1 cup corn flour
- 1 tsp curry powder
- Chopped ingredients:
- 3 cloves garlic, chopped
- 3 shallots, chopped
- 2cm piece ginger, chopped
- 3 tbsp oil
- 12 curry leaves, chopped
- 2 tomatoes, quartered
- 1 big onion, quartered
- Spices (combined):
- 1 tbsp chilli paste
- 1/2 tsp ground fennel (jintan manis)
- 1 tsp ground cumin (jintan putih)
- 1 tsp ground coriander (ketumbar)
- 1 tbsp tomato sauce
- Seasoning:
- 1 tsp salt
- 1 tbsp sugar
- 1 tsp ikan bilis stock granules
- Garnishing:
- Chopped coriander leaves
Instructions
- Coat crab pieces with combined corn flour mixture. Deep-fry until crispy. Drain on absorbent kitchen paper.
- Heat oil in a wok and fry chopped ingredients until fragrant. Add curry leaves.
- Mix in spice ingredients and stir-fry well. Add crabs, onions, tomatoes and seasoning. Toss well and stir-fry till crabs are evenly cooked. Dish out and garnish. Serve immediately.
