Recipe Ingredient

  • French beans (leave whole)
  • 1 tbsp preserved salted radish (choy poh), chopped coarsely
  • 1 tsp chopped garlic
  • 2 tbsp oil
  • 3 - 4 dried red chillies, seeded and soaked
  • 1 fresh red chilli, seeded and chopped
  • 1/2 an onion, cut into wedges
  • 100g chicken or pork meat, minced
  • Sauce (combine):
  • 1 tbsp oyster sauce
  • 1 tbsp tomato sauce
  • 1/2 tbsp Chinese black vinegar (chit choe)
  • 1/2 tsp light soy sauce
  • 1/8 tsp monosodium glutamate
  • 1/2 tsp sugar or to taste
  • A little thick soy sauce, for colour

Instructions

  1. Deep-fry french beans in hot oil for 30 to 40 seconds. Dish out and set aside.
  2. Heat oil in a wok and lightly brown the chopped garlic and preserved salted radish. Add dried red chillies and toss briskly.
  3. Add minced chicken meat and chopped chillies and stir in combined sauce ingredients.
  4. Add french beans and stir-fry briskly. Sprinkle in one to two tablespoons water and bring to the boil over a high heat. Stir in onion wedges and toss well to combine. Dish out to serve immediately.
