Recipe Ingredient
- 350g salmon fillet, sliced
- 1/2 red capsicum, diced
- 1/2 onion, diced
- 1 sprig curry leaves
- 1 tsp chopped garlic
- 1 tsp chopped ginger
- 1 - 2 tbsp oil
- Seasoning:
- 1 tbsp light soy sauce
- 1 tsp ginger juice
- 1/4 tsp salt
- 1/4 tsp sugar or to taste
- 1/4 tsp pepper
- 1 tbsp fish curry powder
- A squeeze of lemon juice
Instructions
- Lightly marinate salmon with seasoning.
- Heat oil in a non-stick pan. Fry garlic, ginger and curry leaves until fragrant.
- Add capsicum and onion and fry for 20-30 seconds.
- Add marinated salmon and stir-fry briefly for 4-5 minutes.
- Dish out and serve immediately.
