Recipe Description
Whip up a mouthwatering omelette with a delightful combination of minced pork, prawns, and enoki mushrooms! This recipe is not only incredibly delicious but also super easy to make. Recipe Ingredient
- 100g / 1 packet enoki mushroom, cut into 2
- 80g prawns, minced
- 100g minced pork
- 5 eggs, lightly beaten
- 1 tsp corn flour dissolved with 1 tbsp. cold water
- Marinate for the minced pork and prawn :
- 1 1/2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1/4 tsp of salt
- 1/8 of white pepper
Instructions
- In a medium bowl, add the minced pork and prawns. Mix all the seasoning mixture. Using a chopstick to stir the minced pork and prawns in one direction. Set aside and marinate for 15 minutes.
- In a separate bowl, beat the eggs with salt and cornstarch mixture. Set aside.
- Heat 1 tablespoon of cooking oil in a non-stick pan over medium heat.
- Add the marinated minced pork and prawn. Stir-fry for 1-2 minute until cooked through. Dish up and set aside.
- In the same pan, heat 1 tablespoon cooking oil. Add enoki mushrooms and stir-fry until soften about 1 minute. Dish up and set aside.
- Heat 2 tablespoons of cooking oil in the same pan.
- Pour the beaten eggs into the pan and spread them evenly.
- Cook the eggs for 1-2 minutes until the bottom is set.
- Spoon the minced pork and prawns and enoki mushrooms mixture onto the omelette.
- Flip the other side of the omelette and cook the eggs for another 1-2 minutes or until set.
- Transfer the omelette to a serving plate. Garnish with some spring onions.
- Serve hot with steamed rice or as a side dish.
