Recipe Ingredient
- 170g shitake mushroom
- 170g button mushroom
- 170g oyster mushroom
- 30g basil
- 8g thyme
- 8g tarragon
- 8g oregano
- 7g rosemary
- 7g sage
- 50g garlic, crushed
- 170g onion, chopped
- 200ml white wine
- 3l chicken stock
- 70ml cream
- 50g spring onion, chopped
- 200ml olive oil
- Seasoning to taste
Instructions
- Heat oil in a pot. Brown garlic, onion andmushrooms. Add fresh herbs. Deglaze with white wine. Then add chicken stock and reduce to the desired thickness. Add cream and reduce again. Season to taste.
- Mix the soup in a blender. Ladle into a bowl. Garnish with remaining cream and spring onions.
