Recipe Ingredient

  • 6-8 medium-sized prawns, keep whole or shelled
  • 150g fish fillet, sliced thinly
  • 6 pieces straw mushrooms, halved
  • 100g fresh oyster mushrooms, rinsed
  • 1 litre water
  • 3 stalks lemon grass, smashed
  • 4-5 kaffir lime leaves, crushed
  • 1½ tbsp Thai chilli paste
  • 2 tbsp Thai fish sauce
  • 4 cili padi
  • 3 dried chillies
  • 3 tbsp lime juice (for an extra tangy soup, add a little more)
  • Garnishing :
  • Some coriander leaves

Instructions

  1. Bring water to a boil. Add lemon grass and kaffir lime leaves and allow to simmer for 5-6 minutes.
  2. Put in prawns, fish, all the mushrooms and dried chillies.
  3. Cook for 4-5 minutes. Add chilli paste, fish sauce, cili padi and lime juice. Adjust seasoning before serving. Dish out piping hot soup to serve with garnishing.
