Recipe Ingredient
- 1kg beef (striploin or legs, cut into cubes)
- 3 litre water
- 50 ml cooking oil
- 1 tbsp salt
- 1 tsp sugar
- A
- 2in cinnamon stick
- 5pc star anise
- 5pc cardamom
- B
- 10 shallots, finely chopped
- 5 cloves of garlic, finely chopped
- 1" of ginger, finely chopped
- 2 tbsp 'rempah sup' powder
- 1 tbsp black peppercorn
- 1 tsp white peppercorn
- 4 sweet potatoes, peeled and cubed
- Garnishing
- Local celery or coriander leaf, sliced
Instructions
- Boil beef with 3 litres of water until tender.
- Heat up cooking oil in a pot.
- Fry ingredient A for a few seconds.
- Then add ingredient B, sauté until fragrant for 5 minutes.
- Then pour into the beef and the boiled stock. Add 'rempah sup' powder, black and white peppercorns and bring to a boil.
- Lower the heat and add sweet potatoes, leave to simmer for about 15 minutes until sweet potatoes are cooked.
- Finally, season with salt and sugar to taste.
- Garnish with local celery(daun sup) or coriander leaf.
