Recipe Ingredient

  • 1kg beef (striploin or legs, cut into cubes)
  • 3 litre water
  • 50 ml cooking oil
  • 1 tbsp salt
  • 1 tsp sugar
  • A
  • 2in cinnamon stick
  • 5pc star anise
  • 5pc cardamom
  • B
  • 10 shallots, finely chopped
  • 5 cloves of garlic, finely chopped
  • 1" of ginger, finely chopped
  • 2 tbsp 'rempah sup' powder
  • 1 tbsp black peppercorn
  • 1 tsp white peppercorn
  • 4 sweet potatoes, peeled and cubed
  • Garnishing
  • Local celery or coriander leaf, sliced

Instructions

  1. Boil beef with 3 litres of water until tender.
  2. Heat up cooking oil in a pot.
  3. Fry ingredient A for a few seconds.
  4. Then add ingredient B, sauté until fragrant for 5 minutes.
  5. Then pour into the beef and the boiled stock. Add 'rempah sup' powder, black and white peppercorns and bring to a boil.
  6. Lower the heat and add sweet potatoes, leave to simmer for about 15 minutes until sweet potatoes are cooked.
  7. Finally, season with salt and sugar to taste.
  8. Garnish with local celery(daun sup) or coriander leaf.
