Recipe Ingredient

  • For fritters:
  • 750g zucchini, grated
  • 1 medium onion, grated
  • 1/2 cup plain flour
  • 3 eggs, lightly beaten
  • 1 tbsp oregano
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley
  • Salt and pepper to taste
  • Yoghurt dip:
  • 3/4 cup plain yoghurt
  • 1 small cucumber, seeded and grated
  • 1 large clove garlic, crushed
  • 2 tsp lemon juice

Instructions

  1. Combine all the ingredients in a large mixing bowl. Form into 1cm-round patties. Heat oil in frying pan and shallow fry patties until golden brown.
  2. To make yoghurt dip: Combine the ingredients for the dip in a bowl and mix well.
