Recipe Ingredient
- For fritters:
- 750g zucchini, grated
- 1 medium onion, grated
- 1/2 cup plain flour
- 3 eggs, lightly beaten
- 1 tbsp oregano
- 1 tbsp chopped fresh basil
- 1 tbsp chopped fresh parsley
- Salt and pepper to taste
- Yoghurt dip:
- 3/4 cup plain yoghurt
- 1 small cucumber, seeded and grated
- 1 large clove garlic, crushed
- 2 tsp lemon juice
Instructions
- Combine all the ingredients in a large mixing bowl. Form into 1cm-round patties. Heat oil in frying pan and shallow fry patties until golden brown.
- To make yoghurt dip: Combine the ingredients for the dip in a bowl and mix well.
