Recipe Ingredient
- 250g unripe or green tomatoes, coarsely chopped
- 2 green apples, skinned, cored and chopped
- 3cm piece cinnamon stick
- 125ml white vinegar
- 150g sugar
- 1 1/2-2 tsp salt or to taste
- 50g raisins
- 5 thin slices ginger
- Spices (A) (ground)
- 2 cloves garlic
- 4-5 dried red chillies, soaked and cut into pieces
Instructions
- Put chopped tomatoes, apples, cinnamon stick, vinegar, sugar, salt and (A) in a deep saucepan.
- Cook over moderate heat, stirring occasionally until the apples turn soft for about 20 minutes.
- When the mixture thickens, add in the raisins. Continue to simmer for 8-10 minutes (keep stirring constantly to prevent mixture from sticking to the bottom of the pan).
- Leave to cool slightly before spooning into a dry bottle.
