Recipe Ingredient

  • 400g fragrant long grain rice, washed and drained
  • 3 tbsp margarine or ghee
  • 75g whole almonds, blanched
  • 75g raisins
  • 650ml water
  • 1 tbsp melted margarine
  • Spices:
  • 4cm cinnamon stick
  • 4 cloves
  • 1 star anise
  • 3 cardamoms (keep whole)
  • 2 pandan leaves, knotted
  • 1/2 tsp turmeric powder
  • Seasoning:
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 tsp chicken stock
  • A little rose water (for flavouring)

Instructions

  1. Heat margarine or ghee in a pot, sauté almonds and raisins for 1-2 minutes. Dish out and set aside. Add in rice and fry for a while over a gentle low heat. Add in spices and water. Bring to a boil over a medium high heat for 5-6 minutes.
  2. Reduce the heat, then cook covered until the rice is done. Add the melted margarine and seasoning and stir well to combine. Add in the fried raisins and nuts. Sprinkle in a little rose water for flavour. Cover the rice to stand for 10-15 minutes before serving.
