Recipe Ingredient

  • cooked rice (for 2 persons)
  • 600g prawns (shelled)
  • 100g ikan bilis (small)
  • 100g dried prawns (small)
  • 1 clove garlic (finely chopped)
  • 4 kaffir lime leaves (shredded/sliced)
  • 1 red onion (sliced)
  • 3 shallots (finely chopped)
  • 1 piece ginger root (finely chopped)
  • 3 lemon grass (finely chopped)
  • 8 chilli padi (finely chopped)
  • 1 1/2 tom yam cubes
  • 3 teaspoon Thai tom yam paste
  • 1 red chilli (cut for garnishing)
  • 1 spring onion (cut for garnishing)
  • Salt (to taste)

Instructions

  1. Lightly scald the prawns in boiling water and put them aside.
  2. Deep fry ikan bilis and small dried prawns in the wok and put them aside.
  3. Stir-fry shallots, garlic, ginger, lemongrass, chilli padi, red onion and kaffir lime leaves until fragrant.
  4. Mix all fried items in tom yam cube, paste, and salt.
  5. Lastly, stir-fry ingredients with prawns and rice.
  6. Garnish fried rice with red chilli and spring onion before serving.
