Recipe Ingredient
- 3 bowls cooked rice, left overnight
- 12 petai seeds, split and diced
- 1 tbsp dried prawns, soaked and chopped
- 50g anchovies, rinsed
- 1 tsp chopped garlic
- 2 eggs
- 1 tbsp oil
- 1 tbsp sesame oil
- Seasoning
- 1 tbsp light soy sauce
- 2 tbsp oyster sauce
- ½ tsp sugar
- ½ tsp salt
- ½ tsp pepper
- ½-¾ tsp ground black pepper
Instructions
- Fry anchovies until crispy and set aside.
- Heat oil and sesame oil in a wok and fry garlic and dried prawns until fragrant.
- Push them to one side, then add eggs and scramble until just cooked.
- Add rice and toss briefly. Stir in seasoning and fry well. Add petai to mix.
- Sprinkle in pre-fried anchovies before serving.
