- 2 chicken breast
- 1cup pitted cherries
- 1tbsp shallots
- 1tsp garlic
- 1/4cup balsamic vinegar
- 1/2cup chicken stock
- 1tbsp sage, chopped
- 1tbsp unsalted butter
- olive oil
- salt
Instructions
- In a pan heat up the olive oil. Season the chicken breasts with salt and pepper and sear until cooked through. Remove from the pan and place on a plate.
- Add more oil in the pan if necessary and put in the shallots and garlic. Stir for 1 minute. Add in the cherries and cook for another minute.
- Add in the balsamic vinegar and stir to deglaze the pan. When the vinegar has almost evaporated add in the chicken stock and sage and cook for 2 minutes until reduced. Remove from heat and stir in the butter.
- Season with salt and pour this on top of the chicken breasts.
