Recipe Ingredient
- 1 chicken, cut into pieces
- 2 small packets kurma/2 tbsp curry spices
- 1/4 cup kerisik
- 4 cups coconut milk
- Salt to taste
- Gula Melaka to taste
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves, coarsely cut
- 2 turmeric leaves, finely cut
- Ingredients to grind:
- 10 red onions
- 4 shallots
- 15 cili padi
- 15 dried chillies
- 2cm ginger
- 2cm galangal
- 1cm fresh turmeric
Instructions
- Fry the ground ingredients with lemongrass until fragrant.
- Put in the kurma spices and fry some more.
- Put in the coconut milk and kerisik. Mix well.
- Put in the chicken.
- Put in the turmeric leaves, lime leaves, salt and gula Melaka.
- Cook until thick.
