Recipe Ingredient
- 1 pork leg (1kg), cut into sizeable pieces
- 550ml water
- 100g rock sugar
- 100g palm sugar
- 250g old ginger, smashed
- 3 whole bulbs smoked garlic
- 150ml black vinegar (chit choe)
- 250ml sweet vinegar
- 10 dried chillies
- 5 bird´s eye chillies
- Seasoning:
- 2 tbsp oyster sauce
- 2 tbsp light soy sauce
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp thick soy sauce
- 1 tbsp sesame oil
Instructions
- Marinate pork leg pieces with seasoning
- Fry ginger in a heavy-based pot until fragrant.
- Add marinated pork leg, garlic, dried chillies and bird´s eye chillies. Pour in both types of vinegar and add rock sugar and palm sugar. Bring to a boil.
- Add water then cook for 1 hour or until meat is tender.
