Recipe Ingredient
- 600-650 g spare-ribs (chopped into 4cm pieces)
- Oil for deep-frying
- Marinade (A):
- 1 tsp light soy sauce
- 1/2 tsp dark soy sauce
- Seasoning (B) combined:
- 1 tsp salt
- 1 tbsp hoi sin sauce
- 1 tbsp Worcestershire sauce
- 1½tbsp sugar
- 1/2 tbsp black vinegar (chit choe)
- 3 tbsp tomato sauce
- 1/2 cup water
- 1 tsp sesame oil
- Garnishing:
- 1 tbsp toasted sesame seeds
Instructions
- Marinate spare-ribs in (A) for 30-40 minutes.
- Heat oil in a wok until hot. Deep-fry marinated spare-ribs until lightly golden. Remove and drain from oil.
- Leave 1-1½ tbsp oil in the wok, add ingredients (B) and stir-fry for 30-40 seconds.
- Return the spare-ribs to the wok to cook together with the sauce. Cover the wok and allow to simmer until gravy thickens.
- Dish out and sprinkle with toasted sesame seeds.
