Recipe Ingredient

  • 350g spareribs
  • 4pickled sour plums, seeded
  • 1tbsp young ginger shreds
  • 1tsp chopped garlic
  • 1tbsp chopped red chilli
  • Seasoning (B)
  • 1tsp light soy sauce
  • 1tsp oyster sauce
  • 1tbsp preserved bean paste (tau cheong)
  • 1tsp shallot oil
  • 1/2tsp sesame oil
  • 1tsp sugar
  • 1/2tsp pepper
  • 1tsp Shao Hsing Hua Tiau wine
  • 1-2tbsp water
  • 1tsp cornflour

Instructions

  1. Chop spareribs into bite-sized pieces. Mash pickled sour plums and chop coarsely. Combine spareribs with sour plums, ginger shreds, garlic and chilli.
  2. Add seasoning (B) to mix. Arrange marinated spareribs in a heatproof deep dish. Steam over high heat for 20-25 minutes or until meat is tender. Serve hot.
