Recipe Ingredient
- 200g minced pork or chicken
- 1 tbsp soaked dried scallops, shredded
- 20g salted fish, diced and deep fried
- 1 salted egg yolk, mashed and chopped
- Marinade
- 1/8 tsp pepper
- 1/8 tsp sugar
- 1/2 tsp sesame oil
- 1 tsp cornflour
- Sauce ingredients
- 1/4 tsp pepper
- 1/4 tsp sugar
- 1/2 tsp light soy sauce
- 1/2 tsp Shao Hsing Hua Tiau wine
- 1/2 cup fresh chicken stock
- Garnish
- 1 tbsp chopped spring onion and coriander leaves
- 1 tbsp shredded ginger
Instructions
- Combine minced meat and shredded dried scallops with marinade. Throw mixture against a bowl continuously for about a minute (this is to improve the texture of the meat).
- Spread mixture in a heat resistant bowl or container. Sprinkle over with prefried salted fish and salted egg yolk. Add combined sauce ingredients and stir to mix.
- Steam over rapid boiling water for 10-15 minutes. Add garnishing ingredients and serve at once.
