Recipe Ingredient

  • 1 kg glutinous rice, washed, soaked overnight and drained
  • About 24-28 pieces dried bamboo leaves, soaked overnight, washed and drained
  • Some hemp-string, soaked
  • 6-7 tbsp oil
  • 12-14 salted egg yolks
  • 2 tbsp chopped garlic
  • 2 tbsp chopped shallots
  • 2 tbsp oil
  • 400g belly pork, cut into chunky pieces
  • 12-14 dried chestnuts, soaked overnight and cleaned
  • 3 tbsp dried prawns, soaked and drained
  • 12-14 dried mushrooms, soaked
  • Seasoning (A) - (For the rice):
  • 1 tbsp Chinese five spice powder (ng heong fan)
  • 2½ tbsp light soy sauce
  • 1½ tbsp dark soy sauce
  • 1½ tsp sugar
  • 1/2 tsp pepper
  • 1/2 tsp salt or to taste
  • 1 tbsp chicken stock granules
  • Sauce (B) - (For the filling):
  • 1 tbsp light soy sauce
  • 1/2 tbsp Chinese five spice powder (ng heong fun)
  • 1/4 tsp pepper
  • 1 tbsp dark soy sauce
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tbsp chicken stock granules
  • 1/2 tbsp sesame oil

Instructions

  1. Heat oil in a wok, fry 1 tablespoon chopped garlic and 1 tablespoon chopped shallots until fragrant. Add glutinous rice, black eyed beans and (A). Stir-fry well to combine then dish out.
  2. Marinate pork with (B) for several hours. Heat 2 tablespoons oil and fry remaining garlic and shallots till golden and fragrant. Add marinated pork, dried prawns, mushrooms and chestnuts. Stir-fry for 3-4 minutes. Remove and leave aside.
  3. To wrap the chung, take 2 pieces of bamboo leaves and fold into a cone. Add 1 heaped tablespoon of rice and bean mixture and add a slice of pork, a piece of mushroom, a chestnut and some dried prawns together with the gravy. Top with another heaped tablespoon of rice mixture. Wrap into a chung and secure tightly with hemp-string. Do the same for the rest of the rice and filling.
  4. Put the bundles of chung in a pot. Fill up with hot water to cover all the dumplings. Add 1 tablespoon salt and 1 tablespoon sugar to the water. Bring to a boil and cook for 3-4 hours. Add more water to the pot if required. The cooking time will be shortened to more than half if you use a pressure cooker.
