Recipe Ingredient

  • 500g pork, lamb or chicken, sliced into cubes
  • 1 lemon, grated for zest
  • 1 Bombay onion, cut into wedges
  • 400g pumpkin, skinned
  • Seasoning
  • 1 tsp salt
  • 2 tbsp honey
  • 1 tbsp chilli powder
  • 2 tbsp chopped garlic
  • 2 tbsp dried rosemary
  • 1 tbsp dried oregano
  • 2-3 tbsp olive oil

Instructions

  1. Squeeze the lemon for juice. Marinate meat of your choice with the seasoning, lemon zest and lemon juice. Leave aside to marinate for several hours, preferably overnight in the refrigerator.
  2. Steam pumpkin until just tender but not too soft, then cut into slices.
  3. Thread meat pieces, a piece of onion and a slice of pumpkin, alternating the ingredients, on a wet wooden skewer or wet satay stick until it is filled three quarters of the way.
  4. Place over burning coals or grill in a preheated oven at 200°C for 10-15 minutes, brush skewers with remaining marinade ingredients, turning over occasionally until meat is cooked through. Serve immediately.
