Recipe Ingredient

  • Sauce Pork
  • 600g belly pork
  • 5 hardboiled eggs, shelled
  • 2 whole pods of garlic with skin on, lightly smashed
  • 1 tbsp Hua Tiau wine
  • 1 star anise
  • ½ tsp white peppercorns
  • 2cm cinnamon bark
  • 1½ tbsp rock sugar
  • 3 cups water
  • Marinade
  • 2 tbsp light soy sauce
  • 1½ tbsp thick soy sauce
  • 1 tsp salt
  • ½ tsp Chinese five spice powder

Instructions

  1. Bring a pot of water to a boil. Add cooking wine. Blanch the pork for 3-5 minutes. Remove and slice pork into 3cm-thick pieces.
  2. Season pork with marinade for 30 minutes. Heat a casserole dish and add marinated pork, garlic, cinnamon bark, star anise and peppercorns. Pour in water and add rock sugar and bring to a boil. Reduce the heat, then simmer, covered for 25-30 minutes. Add eggs and simmer for another 8-10 minutes or until the meat is tender.
