- Sauce Pork
- 600g belly pork
- 5 hardboiled eggs, shelled
- 2 whole pods of garlic with skin on, lightly smashed
- 1 tbsp Hua Tiau wine
- 1 star anise
- ½ tsp white peppercorns
- 2cm cinnamon bark
- 1½ tbsp rock sugar
- 3 cups water
- Marinade
- 2 tbsp light soy sauce
- 1½ tbsp thick soy sauce
- 1 tsp salt
- ½ tsp Chinese five spice powder
Instructions
- Bring a pot of water to a boil. Add cooking wine. Blanch the pork for 3-5 minutes. Remove and slice pork into 3cm-thick pieces.
- Season pork with marinade for 30 minutes. Heat a casserole dish and add marinated pork, garlic, cinnamon bark, star anise and peppercorns. Pour in water and add rock sugar and bring to a boil. Reduce the heat, then simmer, covered for 25-30 minutes. Add eggs and simmer for another 8-10 minutes or until the meat is tender.
