  • 400g pork belly with skin (whole piece)
  • 1-2 tbsp oil
  • Ingredients
  • 1 tsp minced garlic
  • 1 tsp minced shallots
  • 1 tbsp tom yam paste
  • 1 tsp oyster sauce
  • 1 tbsp fish sauce
  • ¾-1 tsp sugar or to taste
  • 1½-2 tbsp evaporated milk
  • ½ tsp chicken stock granules
  • 1-2 tbsp water
  • Thickener
  • 1 tsp cornflour mixed with 1 tbsp water

Instructions

  1. Put the belly pork in a pot of boiling water and simmer for 20 minutes or until meat is just cooked to the right texture. Dish out and soak meat in cold water for 15-20 minutes. Cut pork into thick slices, then pat dry. Deep-fry the slices of meat for 2-3 minutes. Drain off oil.
  2. Sauté garlic and shallots in 1-2 tablespoons oil until fragrant. Add the rest of ingredients and fried meat slices. Stir well to mix. Thicken the gravy then dish out to serve with blanched sawi (mustard greens).
