Recipe Ingredient

  • 3 pieces (190g each) pork loin chops
  • 1½-2 tbsp castor sugar
  • Pinch of salt
  • Dash of pepper
  • 2 tbsp olive oil
  • Baby salad leaves
  • Balsamic dressing
  • 60ml extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp mustard

Instructions

  1. Clean pork, then pat-dry with paper kitchen towels. Rub both sides of pork with sugar, salt and pepper.
  2. Heat olive oil in nonstick frying pan. Cook pork slices over medium-high heat for 1 minute each side or until golden and caramelised. Reduce heat and cook for 2-3 minutes each side or until cooked through.
  3. Transfer pork to a serving plate and leave for 5-6 minutes. Serve with dressing.
  4. To prepare balsamic dressing: Combine olive oil, balsamic vinegar and mustard in a screw-top jar. Add a pinch of salt and a dash of pepper.
  5. Then secure the lid and shake to mix.
