Recipe Ingredient

  • 300g brinjals
  • 150g minced pork
  • 50g salted fish
  • 1-2 tbsp oil
  • 1/2 tsp sesame oil
  • Seasoning (A)
  • 1/4 tsp salt
  • 1/2 tsp corn flour
  • Seasoning (B)
  • Dash of pepper
  • Pinch of salt
  • 1/2 tsp oil
  • 1/2 tsp corn flour
  • Sauce ingredients (combined)
  • 1 tsp light soya sauce
  • 1 tsp oyster sauce
  • 1/4 tsp thick soya sauce
  • 1/2 tsp chicken stock granules
  • 200ml water
  • Thickening
  • 1 tsp corn flour mixed with 1 tbsp water

Instructions

  1. Cut brinjals in half and then into 4cm lengths. Marinate brinjals with seasoning (A) for 3-4 minutes. Heat enough oil in a wok and deep-fry brinjals until soft. Remove and drain from oil.
  2. With the remaining hot oil deep-fry the salted fish until crispy. Remove and set aside. Shred salted fish.
  3. Marinate minced pork with seasoning (B) for 10-15 minutes. Heat oil and sesame oil in a wok and fry pork for 1-2 minutes.
  4. Add in brinjals and combined sauce ingredients.
  5. Bring to boil and simmer for 1-2 minutes. Add thickening. Dish out and sprinkle with pre-fried salted fish.
