Recipe Ingredient

  • 500g belly pork, cut into pieces
  • 2 pieces firm soya bean cakes (taukwa), cut into cubes
  • 5 hardboiled eggs
  • 1-2 tbsp oil
  • 2 tbsp sugar
  • 3-4 cloves garlic (with skins on), lightly smashed
  • For the sauce or gravy:
  • 3 tbsp light soy sauce
  • 1½-2 tbsp dark soy sauce
  • 1/2 tsp salt
  • 1–1½ tbsp rock sugar cubes
  • 250ml hot water

Instructions

  1. Deep-fry soya bean cakes in hot oil until lightly golden. Drain from oil and put aside.
  2. Heat up oil and sugar in a heavy-bottomed saucepan until sugar starts to turn a light golden brown. Put in the garlic and toss around for 30 seconds, then add sauce ingredients. Bring to a boil.
  3. Add in the pork and cook for 40-45 minutes over a low simmering boil or until pork is well done (add a little more water should the gravy thicken before the meat is tender).
  4. Add in the eggs and the fried soya bean cakes and leave to simmer for an extra 10-15 minutes. Dish out, shell the eggs and serve immediately.
