Recipe Ingredient

  • Pork Knuckles 2Kg
  • Black Rice Vinegar 750cc
  • Water 1 litre
  • Brown Sugar 600gm
  • Old Ginger 300-500gm
  • Black Beans 100gm
  • Sesame Oil for frying

Instructions

  1. Blanch pork knuckles in boiling water for 3-5 mins. Cut to medium size pieces and drain. Fry black beans in hot wok without oil until a bit fragant. Take out. Cut old ginger into chunks and crush with back of chopping knife and fry in sesame oil. Bring water to boil, add vinegar and rest of ingredients. Boil in medium fire for 2 hours. Add a few tablespoonfuls for taste or more sugar and vinegar.
