Recipe Ingredient
- Main Ingredients:
- 600g belly pork, cut into thick strips
- 4–5 tbsp oil
- 40g tamarind pulp, mixed with 300ml water and squeezed to obtain tamarind juice
- 4 green chillies, slit to remove seeds
- 50g sugar or to taste
- 1 tsp dark soy sauce
- 1 tsp salt or to taste
- 1 tsp pepper
- Ground ingredients (Combined):
- 6 shallots
- 2 cloves garlic
- 2 tbsp coriander powder
- 2 tbsp preserved soy bean paste
Instructions
- Heat oil in a wok and sauté ground ingredients until fragrant.
- Add pork and fry until pieces are well coated with spices. Add dark soy sauce, sugar, salt, pepper and tamarind juice and chillies.
- Bring to a boil, then reduce heat and simmer until pork is tender. When cooking, add a little more water if gravy is too thick.
