Recipe Ingredient

  • Main Ingredients:
  • 600g belly pork, cut into thick strips
  • 4–5 tbsp oil
  • 40g tamarind pulp, mixed with 300ml water and squeezed to obtain tamarind juice
  • 4 green chillies, slit to remove seeds
  • 50g sugar or to taste
  • 1 tsp dark soy sauce
  • 1 tsp salt or to taste
  • 1 tsp pepper
  • Ground ingredients (Combined):
  • 6 shallots
  • 2 cloves garlic
  • 2 tbsp coriander powder
  • 2 tbsp preserved soy bean paste

Instructions

  1. Heat oil in a wok and sauté ground ingredients until fragrant.
  2. Add pork and fry until pieces are well coated with spices. Add dark soy sauce, sugar, salt, pepper and tamarind juice and chillies.
  3. Bring to a boil, then reduce heat and simmer until pork is tender. When cooking, add a little more water if gravy is too thick.
