- 1 large bell pepper, lightly roasted/grilled and cut into 10 pieces
- 5 ladies fingers/okra, halved
- 50g eggplant, cut into rings
- 2 cloves garlic, roasted and sliced
- 20g sundried tomatoes, sliced
- 20g feta cheese, cut into small cubes
- 2 tbsp fresh basil, chopped (or 1 tbsp dried basil)
- 1/2 cup mozzarella cheese
- Basic pizza dough
- Basic pizza sauce
- Basic pizza dough:
- 200g flour
- a pinch of salt
- 18ml olive oil
- 110ml warm water
- 7g dry yeast
- Basic pizza Sauce:
- 10ml olive oil
- 150g tomato, chopped (remove seeds)
- 1 onion, minced
- 2 pips garlic, minced
- a pinch of dried oregano
- 2 tbsp fresh basil (1 tbsp dried basil)
- salt and black pepper
Instructions
- Roll dough to cover 30cm pan and trim off excess.
- Spread pizza sauce evenly and mark it into 10 sections.
- Arrange onto each section, the bell pepper, ladies fingers, eggplant, roasted garlic, sundried tomatoes and feta cheese.
- Cover the pizza with chopped basil and mozzarella cheese.
- Bake in hot oven for approximately 10 to 15 minutes.
- Sieve flour and add in salt.
- Dissolve yeast in warm water and let it sit till it bubbles and turns frothy.
- Slowly add the yeast into the flour, folding in with a wooden spoon.
- When the mixture reaches a dough consistency, pour in the olive oil.
- Knead the dough to get the oil in.
- Rest dough at room temperature for 15 minutes and you can start rolling the pizza crust.
- Saute the onions and garlic in olive oil.
- Add tomatoes and cook till tomatoes are soft.
- Add the oregano and basil, then season with salt and pepper.
- If sauce is too thick, add some tomato juice. Your sauce should be of a semi-liquid consistency.
