Recipe Ingredient

  • 1kg mutton thigh (cut into bite size)
  • 1inch lengkuas (crushed)
  • 2inches ginger (crushed)
  • Cinnamon stick to taste
  • Star anise to taste
  • Clove to taste
  • Gravy:
  • 7 shallots (minced)
  • Blend together:
  • 1tbsp fennel (jintan manis)
  • 1tbsp cumin seeds (jintan putih)
  • 8 cloves of garlic
  • 6tbsp chilli paste
  • Black pepper to taste
  • Clove to taste
  • Star anise to taste
  • Salt to taste
  • Cream of 1/2 coconut
  • Some cooking oil

Instructions

  1. Preheat oven at 190°c. Place mutton (both meat and bones) and spices in an oven bag and seal the bag. Place bag on tray and bake for 20 to 25 minutes until meat is tender.
  2. Meanwhile, saute shallots until fragrant. Add in blended items and mix well. Finally, add in coconut cream and stir well, allowing to simmer over low heat until cream turns to oil. Add in baked meat along with its juices and mix thoroughly and allow it to simmer for a few minutes.
