Recipe Ingredient

  • Strawberry jelly:
  • 5g agar-agar powder
  • 20g castor sugar
  • 110ml water
  • 100g strawberry, chopped
  • A few drops red colouring
  • Orange jelly:
  • 5g agar-agar powder
  • 20g castor sugar
  • 110ml orange juice (squeezed from 2 fresh oranges)
  • A few drops yellow colouring
  • Apple-flavoured jelly:
  • 5g agar-agar powder
  • 15g castor sugar
  • 110ml apple juice (get any packet variety from the supermarket)
  • A few drops green colouring
  • Yoghurt jelly:
  • 400ml water
  • 60g castor sugar
  • 12g agar-agar powder
  • 150ml UHT milk
  • 50g plain yoghurt

Instructions

  1. Strawberry jelly portion: Put agar-agar powder, sugar and water into a saucepan. Bring to a boil to dissolve the sugar. Add colouring, then remove from the heat and pour into a shallow plate. Add the chopped strawberries. Leave aside to set, then cut into thin strips.
  2. Orange jelly portion: Combine and cook agar-agar powder, sugar and orange juice to a boil to dissolve the sugar. Add colouring then pour into a shallow plate. Leave aside to set, then cut into thin strips.
  3. Apple-flavoured jelly portion: Put apple juice, sugar and agar-agar powder in a saucepan. Bring to a boil to dissolve the sugar. Add colouring, then pour into a shallow plate. Leave aside to set, then cut into thin strips.
  4. Yoghurt jelly: Combine water, sugar and agar-agar powder in a saucepan. Bring to a boil then add in milk. Lower the heat and stir the mixture for 2 - 3 minutes to heat up the jelly solution.
  5. Turn off the heat and add in yoghurt. Stir well to mix.
  6. Next, prepare any moulds of your choice. (for this, i prefer to use fish-shaped moulds which are symbolic of having an abundance of fish for the lunar new year). Wet the moulds and arrange the fruity jelly strips (the three different types of fruity jelly) at the base of the moulds.
  7. Pour in the yoghurt jelly mixture to fill the mould until half-full. Add more fruity jelly strips and top with more yoghurt jelly. Leave aside to set. Chill well before turning out to serve.
