Recipe Ingredient

  • 500g minced mutton
  • 2 medium onions, diced
  • 2 tbsp ginger, diced
  • 1 tbsp garlic, diced
  • 3 red/green chillies, diced
  • 1 sprig curry leaves, sliced finely
  • A handful of chopped coriander leaves
  • 1 whole egg or egg whites (optional)
  • Spice mix
  • 1 tsp roasted ground cumin
  • 1 tsp roasted ground fennel
  • 1/4 tsp cardamom powder
  • 1/4 tsp powdered clove
  • 1/2 tbsp crushed black/white peppercorns
  • 1/4 tsp cinnamon powder (optional)
  • salt as required
  • iil for deep frying

Instructions

  1. Mix minced mutton with onions, ginger, chillies, curry and coriander leaves, spice mix and salt.
  2. Rest it for about 1/2 an hour for the marinade to infuse.
  3. Shape them into ping pong-sized balls, or into croquette-shaped patties and deep fry or grill them.
  4. When it turns golden brown, remove and drain on paper towels.
  5. Serve with your favorite sauce or use them in a kofta curry
  6. Note: You can take this basic recipe and add all your creativity to take it to the dimension you want.
