Recipe Ingredient
- 500g minced mutton
- 2 medium onions, diced
- 2 tbsp ginger, diced
- 1 tbsp garlic, diced
- 3 red/green chillies, diced
- 1 sprig curry leaves, sliced finely
- A handful of chopped coriander leaves
- 1 whole egg or egg whites (optional)
- Spice mix
- 1 tsp roasted ground cumin
- 1 tsp roasted ground fennel
- 1/4 tsp cardamom powder
- 1/4 tsp powdered clove
- 1/2 tbsp crushed black/white peppercorns
- 1/4 tsp cinnamon powder (optional)
- salt as required
- iil for deep frying
Instructions
- Mix minced mutton with onions, ginger, chillies, curry and coriander leaves, spice mix and salt.
- Rest it for about 1/2 an hour for the marinade to infuse.
- Shape them into ping pong-sized balls, or into croquette-shaped patties and deep fry or grill them.
- When it turns golden brown, remove and drain on paper towels.
- Serve with your favorite sauce or use them in a kofta curry
