Fried Mutton in Fragrant Sauce is quick and easy. That’s what you want after a day of fasting

Recipe Ingredient

  • 400 g mutton
  • 1 tsp garlic (chopped)
  • 30 g ginger (sliced)
  • 1 onion (halved and sliced)
  • 2 red chillies (sliced)
  • Marinade (mix together):
  • 1 tbsp meat curry powder
  • 1/2 tsp white pepper
  • 1/2 tsp black pepper
  • 1 tbsp cooking oil
  • 2 tbsp tapioca flour
  • Sauce:
  • 3 tbsp kicap manis
  • 1 tsp chicken stock powder
  • salt and sugar to taste
  • 200 ml water
  • Garnish:
  • spring onion
  • celery leaves

Instructions

  1. Slice mutton thinly. Mix with the marinade and set aside for at least 2-3 hours.
  2. Heat 2 tablespoons oil in a saucepan on high heat. When hot, pan-fry marinated mutton for 1-2 minutes. Dish out and set aside.
  3. In a clean, deep saucepan, heat 1 tablespoon oil on medium heat and sauté garlic until fragrant. Add the sauce ingredients and bring to a boil.
  4. Put in the prefried mutton and simmer for 15 minutes, until gravy is reduced.
  5. Add the ginger and onion to the mutton and fry briskly to combine. Simmer for 2-3 minutes.
  6. Add in the chillies, toss and fry well, then dish out, garnish, and serve.
