Fried Mutton in Fragrant Sauce is quick and easy. That’s what you want after a day of fasting
Recipe Ingredient
- 400 g mutton
- 1 tsp garlic (chopped)
- 30 g ginger (sliced)
- 1 onion (halved and sliced)
- 2 red chillies (sliced)
- Marinade (mix together):
- 1 tbsp meat curry powder
- 1/2 tsp white pepper
- 1/2 tsp black pepper
- 1 tbsp cooking oil
- 2 tbsp tapioca flour
- Sauce:
- 3 tbsp kicap manis
- 1 tsp chicken stock powder
- salt and sugar to taste
- 200 ml water
- Garnish:
- spring onion
- celery leaves
Instructions
- Slice mutton thinly. Mix with the marinade and set aside for at least 2-3 hours.
- Heat 2 tablespoons oil in a saucepan on high heat. When hot, pan-fry marinated mutton for 1-2 minutes. Dish out and set aside.
- In a clean, deep saucepan, heat 1 tablespoon oil on medium heat and sauté garlic until fragrant. Add the sauce ingredients and bring to a boil.
- Put in the prefried mutton and simmer for 15 minutes, until gravy is reduced.
- Add the ginger and onion to the mutton and fry briskly to combine. Simmer for 2-3 minutes.
- Add in the chillies, toss and fry well, then dish out, garnish, and serve.
