Recipe Ingredient
- 300g pumpkin, cubed (remove seeds and skin)
- 200g rice flour
- 50g corn flour
- 25g castor sugar
- 50g shortening
- Filling:
- 1/2 coconut, grated
- 3 tbsp gula Melaka, crushed
- 1/4 tsp salt
- 2 pandan leaves, knotted
- Cloves for garnishing
Instructions
- Steam the pumpkin till soft. Drain, then mash.
- Combine mashed pumpkin with rice flour, corn flour, sugar and shortening. Mix well into a dough. Divide dough into 20 equal portions.
- Roll each portion into a ball, then press out and wrap filling. Shape the dough into a nice round ball. Use the blunt side of a knife to make six or seven sharp dents to resemble the shape of a pumpkin.
- Stick a clove on top to resemble the stalk. Steam the kuih over moderate heat for seven to eight minutes or until cooked.
