Recipe Ingredient

  • 300g pumpkin, cubed (remove seeds and skin)
  • 200g rice flour
  • 50g corn flour
  • 25g castor sugar
  • 50g shortening
  • Filling:
  • 1/2 coconut, grated
  • 3 tbsp gula Melaka, crushed
  • 1/4 tsp salt
  • 2 pandan leaves, knotted
  • Cloves for garnishing

Instructions

  1. Steam the pumpkin till soft. Drain, then mash.
  2. Combine mashed pumpkin with rice flour, corn flour, sugar and shortening. Mix well into a dough. Divide dough into 20 equal portions.
  3. Roll each portion into a ball, then press out and wrap filling. Shape the dough into a nice round ball. Use the blunt side of a knife to make six or seven sharp dents to resemble the shape of a pumpkin.
  4. Stick a clove on top to resemble the stalk. Steam the kuih over moderate heat for seven to eight minutes or until cooked.
