Recipe Ingredient

  • Green base
  • 7oz Rice Flour
  • 1oz Tapioca Flour
  • 1tsp sago flour
  • 1tsp alkaline water
  • 10 pandan leaves - pounded & squeeze out juice (add ¼ pint water to grind leaves)
  • 8oz sugar
  • White top
  • 2oz Rice flour
  • 2oz Tapioca flour
  • 1tsp salt
  • 1 coconut santan (12oz) - After mixing gets 16oz batter

Instructions

  1. Green base: Mix the flour with ½ pint water.
  2. Boil sugar in ½ pint water.
  3. Pour boiled sugar into flour mixture stirring all the time.
  4. Add enough water to get 2 pints batter.
  5. Add in 1tsp alkaline and strain the batter.
  6. Heat up steaming tray for a few minutes, and pour in the batter.
  7. Stir batter till it thicken and steam for ½ hour.
  8. White top: Add santan with water to get 16oz batter to the flour.
  9. Stir over low fire till a bit thicker.
  10. Pour over green base and steam for ½ hour.
