DO you remember seeing children pulling out the stamen of an ixora flower to get a drop of its nectar? Well, this ice cream recipe combines the sweetness of the strawberry with the ixora flowers.

Recipe Ingredient

  • 2cups water
  • 3/4cup sugar
  • 1cup ixora chinensis flowers( jejarum/siantan)
  • 300g strawberries, fresh
  • 1/4cup lime juice
  • 1/2cup egg white

Instructions

  1. Boil water, then stir in the sugar. Cool, then blend syrup together with the ixora flowers and strawberries to a smooth paste.
  2. Transfer mixture to a bowl, and add in the lime juice. Chill for 3 hours.
  3. Whisk the egg white until light and fluffy. Combine with ixora mixture. Mix well, then place into an ice cream maker and follow the manufacturer’s instructions to make ice cream.
