DO you remember seeing children pulling out the stamen of an ixora flower to get a drop of its nectar? Well, this ice cream recipe combines the sweetness of the strawberry with the ixora flowers.

Recipe Ingredient
- 2cups water
- 3/4cup sugar
- 1cup ixora chinensis flowers( jejarum/siantan)
- 300g strawberries, fresh
- 1/4cup lime juice
- 1/2cup egg white
Instructions
- Boil water, then stir in the sugar. Cool, then blend syrup together with the ixora flowers and strawberries to a smooth paste.
- Transfer mixture to a bowl, and add in the lime juice. Chill for 3 hours.
- Whisk the egg white until light and fluffy. Combine with ixora mixture. Mix well, then place into an ice cream maker and follow the manufacturer’s instructions to make ice cream.
