Welcome to the ‘#HealthyEating’ series! #HealthyEating is launched to encourage everyone to love themselves and live a healthier life. In this quarter, we are sharing vegetarian and/or vegan breakfast/brunch recipes, Avocado & Tomato Toast. This is a great breakfast recipe to start your day!
Recipe Ingredient
- 4 nos sliced bread (toasted)
- some margarine
- Avocado Toast Topping:
- 1 nos ripen avocado (sliced)
- Handful baby spinach
- Pinch of black salt
- Pinch of black pepper
- Pinch of dried chili flakes
- juice of 1/2 lemon
- Tomato Toast Topping:
- 140g cherry tomatoes (cut into 4)
- Handful sweet basil leaves (roughly chopped)
- Pinch of black salt
- Pinch of black pepper
- 1/2 nos lemon zest and juice
Instructions
- Spread some margarine on each side of the bread slices and toast them
- Combine all the ingredients for tomato toast in a bowl and mix it evenly.
- Divide into 2 equal portions and place them on the toasted bread.
- Place some baby spinach on the toast, followed by the sliced avocados.
- Season with some black salt, pepper and a squeeze of lemon juice,
- Enjoy!
