Chef Rram’s Fried Long Beans with Minced Tofu is one of the popular veggie dishes found among Nasi Kandar offerings and goes very well with mixed curry and fried chicken.

Recipe Ingredient
- 2kg long beans, julienned
- 350g cooking oil
- 10g mustard seed
- 5g curry leaves
- 150g onion, sliced
- 80g garlic, chopped
- 100g tomatoes, chopped
- 5g dry chillies
- 50g red chillies
- 5pieces tofu, minced
- 10g turmeric powder
- 20g curry powder
- salt to taste
- 2 eggs
- 500ml coconut milk
Instructions
- Heat oil and fry the long beans. Keep aside.
- Heat oil in a wok and throw in mustard seeds, dried chili and curry leaves. Then add the chopped garlic, tomatoes and sliced onions. Sauté till golden brown and add turmeric powder and curry powder. Reduce the flame to medium.
- Once the spice is cooked, add egg and stir until cooked. After a few minutes add the minced tofu followed by long beans, sliced red chillies and sauté for a short while. Lastly, add salt and coconut milk.
