Recipe Ingredient

  • 450g garupa fish fillet cut chunky pieces
  • 1/2 tbsp crushed chopped shallots
  • 1/2 tbsp grated ginger
  • Marinade:
  • 1/2 tbsp light soy sauce
  • 1 tbsp Worcestershire sauce
  • 1/2 tbsp cooking wine
  • Dash of pepper
  • Seasoning, combine:
  • 1/2 tbsp light soy sauce
  • 1/2 tbsp Worcestershire sauce
  • 1 1/2 tbsp sugar, or to taste
  • 1 tbsp water
  • 1 cup plain flour
  • 1 tbsp oil
  • 1/2 tbsp toasted sesame seeds

Instructions

  1. Place garupa fillet chunks on paper towels to dry. Marinate fish with shallots, ginger and marinade ingredients for 10 minutes. Toss the marinated fish in flour. Deep-fry till golden brown.
  2. Heat oil in a wok. Add seasoning ingredients and cook until sauce turns frothy. Put in deep-fried fish chunks to coat with sauce. Dish up and sprinkle with sesame seeds. Serve immediately.
