Recipe Ingredient
- 400g white fish fillet
- 1 1/2 tbsp fish sauce (nampla)
- 1 onion, finely chopped
- 3 tsp curry powder
- Pepper to taste
- 2 small eggs
- 2 kaffir lime leaves, finely shredded
- Oil for deep frying
- Curry mayonnaise dipping Sauce:
- 1/2 cup mayonnaise
- 1/2 tsp curry powder
- 1 tbsp chopped fresh basil leaves
- 1 tsp lemon juice
Instructions
- DEBONE the fish and cut into chunky pieces before blending to a paste in a food processor. Add in all the other ingredients and stir to mix well.
- Wet your hands and divide fish mixture into eight pieces. Form a ball with the fish mixture and press down firmly to flatten. Deep-fry in hot oil. Drain and serve with dipping sauce.
- To make the curry mayonnaise sauce, combine all the ingredients in a mixing bowl. Mix well. Chill in the refrigerator for 1/2 to 1 hourto balance the flavours.
- Transfer to a sauce bowl and serve.
