Recipe Ingredient
- 1/2 a fish head (garoupa, threadfin or red snapper)approximately 500-600g
- 1/2 tbsp ginger juice
- 1 tsp light soy sauce
- 1/2 tsp sugar
- Ingredients (A)
- 1/2 onion (chopped finely)
- 2 tbsp chopped garlic
- 1 tsp chopped bird's eye chillies
- 1 tsp finely chopped galangal
- 1 tbsp finely chopped lemongras(use only the white portion)
- Seasoning
- 1 tbsp light soy sauce
- 1 tbsp sugar
- 1 tbsp fish sauce
- 2-3 tbsp water
- Dash of pepper
- 1 tsp sesame oil
- Garnishing
- Some chilli and spring onion curls, and coriander leaves
Instructions
- Clean the fish head well and season with ginger juice, light soy sauce and sugar for 20-25minutes.
- Place a pair of chopsticks onto a steamingdish and put the fish head over. Steam overrapidly boiling water for 10 minutes. Removethe fish from the steamer and pour away theexcess water.
- Return the fish to the steamer and spreadthe combined ingredients (A) over the fish.Steam for 3 minutes. Open the wok or steamerand pour the combined seasoning ingredientsover and continue to steam for 2-3 minutes.
- Remove dish and serve with garnishing.
