Recipe Ingredient
- 1 kg crabs cleaned and cut into halves
- Tapioca flour for dusting
- 1 sprig curry leaves chopped
- Ground:
- 3 dried chillies soaked
- 3 fresh red chillies
- 4 shallots
- 2 cloves garlic
- 2 cm piece ginger
- 1 stalk lemon grass sliced
- 2 tbsp preserved soya beans (taucheong)
- Seasoning:
- 1/2 tsp salt
- 1 tbsp sugar or to taste
- 1/2 tsp ikan bilis stock granules
- 1 tsp fish sauce
- Garnishing:
- Spring onion curls
- coriander leaves
Instructions
- Dust crab pieces with tapioca flour then deep-fry in hot oil until crispy.
- Heat three tablespoons oil and saute ground ingredients until fragrant.
- Add in curry leaves. Put in crabs and add seasoning ingredients. Stir-fry until well combined. (Add just a little hot water if dish is too dry.)
- Dish out, garnish and serve.
