Recipe Ingredient
- 700-750g mud crabs
- 1 tbsp Shao Hsing Hua Tiau wine
- 1 tbsp ginger wine
- 2 egg whites
- 4-5 tbsp water
- Seasoning:
- 1 tsp fish sauce
- 1/2 tsp sesame oil
- 1/4 tsp pepper
- 1 tsp sugar
- 1 tsp sesame oil
Instructions
- Rinse the crabs and cut into halves, then clean and drain well. Pour combined ginger wine and Shao Hsing Hua Tiau wine over the crabs and leave to marinate for 1-2 minutes.
- Arrange crab pieces in a heatproof dish. Pour in seasoning ingredients and steam over high heat for 14-15 minutes.
- Mix egg whites with water and stir lightly to combine. Next, pour over the steamed crabs. Continue to steam the crabs over high heat for 2-3 minutes.
- Serve at once.
