Recipe Ingredient
- 400-500g squid, cleaned
- 2 1/2-3 tbsp oil
- Spices (A) - ground and combined:
- 10 shallots
- 3 cloves garlic
- 2cm piece ginger
- 5 fresh red chillies, seeds removed
- 5 dried chillies, soaked
- 2cm piece fresh turmeric
- 2 thin slices galangal
- 3/4 tsp belacan stock granules
- (B):
- 2 stalks lemon grass, smashed
- 2 cardamoms, use seeds only
- 1 star anise
- 3cm piece cinnamon stick
- (C):
- 2-3 tbsp lemon juice
- 2 kaffir limes leaves, torn
- 1/2 cup water
- Seasoning:
- 1 tsp salt or to taste
- 1-2 tbsp sugar
Instructions
- Heat oil in a wok and fry (A) until fragrant then add (B) and continue to fry for one to two minutes.
- Stir in (C) and bring to a low simmering boil. Add in squid and simmer until cooked. Dish out and serve.
