Recipe Ingredient

  • 400-500g squid, cleaned
  • 2 1/2-3 tbsp oil
  • Spices (A) - ground and combined:
  • 10 shallots
  • 3 cloves garlic
  • 2cm piece ginger
  • 5 fresh red chillies, seeds removed
  • 5 dried chillies, soaked
  • 2cm piece fresh turmeric
  • 2 thin slices galangal
  • 3/4 tsp belacan stock granules
  • (B):
  • 2 stalks lemon grass, smashed
  • 2 cardamoms, use seeds only
  • 1 star anise
  • 3cm piece cinnamon stick
  • (C):
  • 2-3 tbsp lemon juice
  • 2 kaffir limes leaves, torn
  • 1/2 cup water
  • Seasoning:
  • 1 tsp salt or to taste
  • 1-2 tbsp sugar

Instructions

  1. Heat oil in a wok and fry (A) until fragrant then add (B) and continue to fry for one to two minutes.
  2. Stir in (C) and bring to a low simmering boil. Add in squid and simmer until cooked. Dish out and serve.
