Recipe Ingredient

  • 6 very large prawns
  • 2 tbsp thick coconut milk
  • Spices (blended into a paste)
  • 8 dried chillies
  • 2 fresh red chillies, seeded
  • 4 shallots
  • 2 garlic
  • 2 slices galangal
  • 1/2 tsp belacan stock granules
  • 2 candlenuts
  • 1 cm fresh turmeric
  • 1 stalk lemon grass
  • 1 tsp coriander powder
  • Seasoning
  • 1 ¼ tsp sugar
  • 3/4 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Heat 3-4 tablespoons oil in a wok and fry blended spice ingredients until fragrant. Add seasoning and thick coconut milk.
  2. Keep prawns whole and make a slit at the back. Devein and clean the prawns.
  3. Parboil the prawns until they change their colour. Spoon a tablespoon of cooked spice ingredients onto each of the prawns. Place the prawns over a non-stick pan and grill, covered, for 3-4 minutes. Remove and serve immediately.
