Recipe Ingredient
- 6 very large prawns
- 2 tbsp thick coconut milk
- Spices (blended into a paste)
- 8 dried chillies
- 2 fresh red chillies, seeded
- 4 shallots
- 2 garlic
- 2 slices galangal
- 1/2 tsp belacan stock granules
- 2 candlenuts
- 1 cm fresh turmeric
- 1 stalk lemon grass
- 1 tsp coriander powder
- Seasoning
- 1 ¼ tsp sugar
- 3/4 tsp salt
- 1/2 tsp pepper
Instructions
- Heat 3-4 tablespoons oil in a wok and fry blended spice ingredients until fragrant. Add seasoning and thick coconut milk.
- Keep prawns whole and make a slit at the back. Devein and clean the prawns.
- Parboil the prawns until they change their colour. Spoon a tablespoon of cooked spice ingredients onto each of the prawns. Place the prawns over a non-stick pan and grill, covered, for 3-4 minutes. Remove and serve immediately.
