Recipe Ingredient
- 10 large chillies seeded
- 10 cloves of garlic peeled
- 20 shallots peeled
- 4" ginger root peeled
- 4" fresh tumeric peeled
- 2 tomatoes, seeded
- 1-tablespoon coriander seeds
- 10 candlenuts
- 1-teaspoon belacan
- 4 tablespoons oil
- 2 stalks lemongrass bruised
- 3 tablespoons tamarind juice
Instructions
- Put all spice ingredients in a blender.
- Heat the oil in a pan, put in the stalks of lemongrass and the blended spices.
- Fry till aromatic and golden brown.
- Add the tamarind juice.
- Cool and use as needed.
