Recipe Ingredient
- 500g medium-size prawns
- 200g unripe mango, sliced thinly
- 1/2 onion, sliced
- 3 shallots, sliced
- 20 cilipadi, pounded coarsely
- 1 tbsp dried prawns, chopped coarsely
- Dressings:
- Juice of 2 limes
- Pinch of salt to taste
- 1/2 tsp sugar to taste
- 1 tbsp fish sauce (nampla)
- 1/2 tbsp sesame oil
- 2 tbsp toasted sesame seeds
- Chopped coriander leaves and stalks
Instructions
- Remove prawn shell and vein. Poach until pink and firm. Halve lengthwise. Combine dressing ingredients together. Add chilli padi, dried prawns, onions and shallots.
- To serve, toss prawns and mango slices with dressing. Add a sprinkling of sesame seeds and chopped coriander. Serve immediately.
- If you are making this dish for a party, an attractive way to present it would be to have a tray with all the ingredients in small individual bowls. Toss the salad or kerabu at the table just before serving.
