Recipe Ingredient
- 200g fish fillet, steamed and flaked
- 1/2 an onion, sliced thinly
- 1 tbsp chopped spring onion
- 1 tsp chopped coriander leaves
- 1 tsp chopped fresh red chilli
- 75g flour
- 15g corn flour
- 1/4 tsp baking powder
- Seasoning:
- 1/2 tsp chicken stock granules
- Pinch of salt
- Pinch of pepper
- 1/2 tsp paprika
- 150ml water
- 1 tbsp corn oil or olive oil
- Dipping sauce:
- 2 - 3 tbsp Thai chilli sauce
- 1/2 tsp prepared mustard sauce
- 1 tbsp lime juice
- Pinch of salt and sugar
- Just enough corn oil for frying
Instructions
- Sift flour, corn flour and baking powder into a mixing bowl. Add seasoning and mix. Add in water, onion, spring onion, coriander leaves, corn oil, chilli and flaked fish. Mix well to combine. Set aside for 10 - 15 minutes to rest the batter.
- Heat a non-stick pan with just enough oil until hot. Drop spoonfuls of the batter mixture into the hot oil. Cook for 2 - 3 minutes on each side or until fritters turn crisp and golden.
- Drain the fritters on absorbent kitchen paper. Serve with dipping sauce.
